This was Phred Westfall speaking, the co-owner of the now closed Elemental restaurant in Seattle. I had just done my normal speech asking for a gluten free menu, and this was his reply. Phred continued, you see, you’re either a laktard, or you’re a glutard, and you’re a glutard. It turned out – I had to look it up online – glutard is an urban word for someone having coeliac disease (called celiac in the US).
